Shizzled Mahi with Jalapeno-Mint Glaze
4 (5-ounce) mahi mahi fillets
1 cup of The Shizzle Jerk Marinade
1 cup red wine vinegar
1 cup white wine vinegar
1/2 cup sugar
1 jalapeno pepper, chopped
1/3 cup coarsely chopped fresh mint leaves
Place vinegar and sugar in a medium nonreactive saucepan and cook over medium-high heat until the sugar is completely melted, mixture is reduced by 1/2 and is thick. Carefully transfer the mixture to a blender and add the jalapeno and mint and blend until smooth. Season with salt to taste. Let the glaze cool to room temperature.
Coat the fish with The Shizzle Jerk Marinade on all sides. Place onto a hot grill on medium heat. After 2-3 minutes (should be brown) turn over and cook 3 to 6 minutes, until fish is cooked through.
Remove fish and plate, drizzling with jalapeno mint glaze.
